Chinese Vegetable Fried Rice
Rice - 2 cups
Carrots - 100g
French beans - 100g
Capsicums - 15g
Celery - 4 stocks
Soya Sauce
Ajinomoto - 2 tsps
Salt to taste
Cooking oil
Cook rice. Cut all the vegetables. Heat oil and fry vegetables. Add
Ajinomoto and cook. Mix cooked rice, fried vegetables, salt and Soya
sauce for 5 minutes.
French toast for the kiddies
Milk - 100ml
Sugar - 4 teaspoons
Bread - 4 slices
Ghee / Oil - 2 teaspoons
A pinch of salt
Egg - 1
Vanilla essence - a few drops
Break the egg and beat until slightly frothy. Add sugar, salt and
vanilla. Beat the mixture. Stir in the milk. Place the mixture in a plate. Soak the
slices of bread in this. Warm the flat griddle (Tava) on a low heat.
Add some oil or ghee. Fry the slices. Brown both sides evenly. Serve hot.
Potato Talasani
Readymade potato chips - 250g
Cooking oil - 1 tablespoon
A pinch of turmeric
Chilli powder - 1/2 teaspoon
Cumin seeds (Jeera) - 1/2 teaspoon
Salt to taste
A pinch of asafoetida (Hing)
Heat oil, add asafoetida, cumin, turmeric, chilli powder, potato chips
and salt. Stir-fry until the potatoes are cooked and tender.
Rasam
Tin of tomatoes
Cooking oil / Ghee - 2 tsps
Cloves (Lavang) 2 - 4
Cinnamon (Dalchin) - 1-2 small pieces
Rasam powder - 2 spoons
Onion - 1
Jaggery - small piece
Green coriander
Salt to taste
Curry leaves - 8-10
Put tomatoes, rasam powder, salt, jaggery into the liquidiser and mix it. Heat the liquidised contents. Add one onion, sliced into big
pieces. Cook for 3-4 mins. Heat Ghee/Oil. Add cloves, cinnamon and
curry leaves and pour into the mixture. Add green coriander.
Cooking tips
You can roast 1-2 Papads in the microwave on high for 1 minute.
If you want to peel garlic easily, place it in the microwave on high for 20 seconds.
Jhatpat Rice in Microwave
Rice - 2 cups, Water - 4 cups, Margarine - 1/2 teaspoon. Cook it for 20 minutes in the microwave at 650 Watts.
