Amrut Aubergine

Ingredients
½ kg small (long) aubergines
125g tomatoes
5 tbsp. Oil
1 tbsp. Cumin seeds
1 tbsp. Mustard seeds
1 tsp. Fenugreek (methi) seeds
1 tsp. Turmeric powder
1 tsp. Peppercorns
1" piece Ginger
8 cloves Garlic
10 Small green chillies
¼ cup Sugar
2 Small lemons, juice of
A few Curry leaves
Method
Grind to a paste the green chillies, cumin, mustard, ginger, garlic, and fenugreek seeds.
Clean and slice aubergines in half.
Heat oil and add curry leaves, the ground paste, and aubergines, and fry for 5 minutes.
Add tomatoes, sugar, turmeric, pepper and lemon juice.
Mix and cook until tender.
